Super-easy Salmon with Julienne Vegetables

I love fish. I could eat it every day. I actually do when we are on vacation by the sea. Oh, that lovely catch of the day every day … At home I have to satisfy with not so fresh one, but better than none. You can’t get fresh salmon everywhere anyway.

When my darling told me about this super easy recipe, I was thrilled. Well, I still am - every time I prepare it.

Ingredients:

1 or 2 salmon fillets
olive oil
salt

For vegetables:

1 orange carrot
1 yellow carrot
1 zucchini
1 tbsp olive oil
1 tsp butter
1 tbsp lemon juice
salt
pepper

Instructions:

  1. Preheat oven to 200 C and line a baking tray with parchment paper.
  2. Remove skin from salmon fillet(s). Season with salt and sprinkle with olive oil. Bake for 20 minutes. I know I should cook it less than that, but I like it ’well done’.
  3. Meanwhile cut vegetables into 5 cm sections and into Julienne slices. Excellent quality De Buyer Mandoline like this will do the job for you.
  4. Heat olive oil and butter in a pan or a wok like this. Fry vegetables for 2 to 3 minutes. Season with salt, pepper and lemon juice.
  5. Serve and enjoy!
