This is a great side dish to serve with fish. With universal corer the recipe is really easy and the result is pleasantly different from classic courgette boats.
2 long courgettes (zucchinis)
30 g pine nuts
1 clove of garlic
50 g grated Parmesan cheese
freshly ground black pepper
1. Cut courgettes crosswise into 3 of 4 pieces. Use the universal corer to hollow them out. Place them on a baking sheet, sprinkle with olive oil and roast for 15 minutes at 200 C.
2. Roast pine nuts in a fry pan for about 3 minutes, than grind them up.
3. Chop the insides of the courgettes into small cubes. Mix with 1 egg, Parmesan cheese, pine nuts, garlic, basil, salt and black pepper.
4. Stuff courgettes. Roast for 45 minutes at 180 C.
