If you have a special mould like this, you can surprise your family and friends with adorable mini cakes.
Ingredients for 12 cakes:
200 g sugar
seeds from half vanilla pod
zest of half a lemon
1/2 cup sunflower oil
1/2 cup milk
170 g spelt flour
1/2 tsp baking powder
1,5 Tbsp cocoa powder
1 Whisk together eggs and sugar until light and fluffy. Add vanilla seeds and lemon zest.
2 While constantly whisking slowly pour in oil and milk.
3 Mix flour and baking powder and add one spoon at a time into the egg mixture.
4 Divide batter in half and add cocoa powder to one half. Mix well.
5 Grease your mould with melted butter, than pour one spoon of white batter into each mould, top with cocoa batter, than repeat.
6 Using knife or a wooden skewer run through the batters in a swirling motion to marble them.
7 Bake at 180 C for 20 minutes.
